I also made this today for lunch. I've got to say, it came out better than I expected. So for the pizza dough you need:
- 1 cup of warm water
- 2 teaspoons of yeast
- 1 tablespoon sugar
- 1 tablespoon olive oil
- 3 cups all purpose flour
- 1 teaspoon salt
For your pizza you need cheese strings or sticks for the crust, pizza sauce and whatever toppings you want. In a bowl of warm water add in the yeast, sugar and olive oil and let that froth up for about 10 minutes. While you're waiting for the yeast to activate itself, you can put the flour and salt into a bowl and give that a little mix with a fork or your hands for the savages out there. After about 10 minutes, your yeast should have frothed up. If so, add that into the bowl of flour and salt and begin mixing that. Once its been combined pretty well, take that out and slap it onto a floured surface. Begin to knead the dough for at least 8 minutes. Once that's done and you've gotten the dough to an elastic like texture, get a bowl with a drizzle of olive oil and cover it with a moist towel or do what I did and just use plastic wrap. Put the bowl in a warm place for 1-2 hours and it should double in size. I left mine in the oven so you can do the same.
Since I had so much time on my hand, I went for a walk and then got caught up at work. Make this time productive. Don't waste it doing stuff like homework, or cleaning or doing laundry. Stick to playing FIFA or watching YouTube videos. Wise words from Matthew.
After being productive with your 1-2 hours, your ball of dough should have doubled in size. Take off the plastic and put your fist right into it. It should deflate. Now what I did was I cut this in half to make 2 pizzas, but the pizzas came out pretty small as you will see in the photos below. So I recommend you use this ball of dough for just one pizza, and if you want 2 pizzas, just double the pizza dough recipe. Now I'm not going to go into detail because it's pretty straight forward but now you just put the sauce and cheese as well as whatever toppings you want. For the crust you just get a cheese string or stick and place it on the edge of the crust. Then fold over the dough and roll it over the cheese string and pinch the dough down. I think you should be able to get the idea and if you don't, then maybe you shouldn't be trusted with knives or the oven, just saying. They are then ready to go into a 450 C preheated oven for 20-25 minutes or until it's done in your opinion. If you like soft crust, take it out at around 20 minutes, if you like crispy crust, then take it out at about 25 minutes. It's all up to you.

Above are the before and afters of the pizza, as well as a close up of the stuffed crust. I just want to say that you don't have to stuff it with cheese, you could really stuff it with anything you want. You don't even need to have stuffed crust, you can just have it with regular crust, but then I might judge you and probably think you're weird if you don't go with the stuffed crust.
The Dorito Crusted Chicken Nuggets are really simple to make and came out pretty good but not as good as I expected. It seemed like baking it took away from the chip flavor, but I still think it tasted good plus it's good to know that if I don't have bread crumbs around, I could always use a bag of chips. So you need:
- 2 chicken breasts ( if you are serving more people, just buy some more breasts )
- 2 tablespoons flour
- 1 beaten egg
- 1 large bag of chips ( I used Sweet Chili Heat )
First, trim the fat off the breasts and cut them into little nuggets, but you could even do it whole or make them into strips. Crack an egg into a bowl and beat it with a fork. Get a plastic sandwich bag and put about half a bag of chips inside, then smash them up. Don't smash them too fine because you still want to have some crunch. If you are blessed like me and have a younger sibling, sit back and enjoy a glass of milk and let them do the work. Alyssa wouldn't do it because she's too cool, so I got Julian to do it. It's not slavery, it's love, I swear. Place those chips into a bowl along with the flour. So at this point you should have a bowl with a beaten egg, a bowl with smashed chips and a bowl or plate with cut up chicken breasts. Go get yourself a greased pan or tray and make yourself a line of your ingredients starting with the chicken breasts, then the egg, then chips and finally the greased pan. You can do this step on your own, just make sure you have a wet hand and a dry hand meaning one hand for the chicken nuggets and egg mixture and the other for the chips and pan. Dunk a nugget and roll it in the egg bowl, then place it into the chip mixture and get it well coated and then into the pan or tray. But again, thank god I have Julian to help me ( I'm being sarcastic ). So I took the responsibility of the wet steps and he took the responsibility of the dry steps. If you want, when all the chicken nuggets have been coated and placed on the tray, if you have extra chips still in your bowl, just sprinkle it on top of the chicken. That's what I did but you don't have to.

So these are now ready to pop into the oven or the toaster oven at 450 C for 20 minutes, flipping them half way through.
In the end the pizza tasted great, except for the one with all the toppings but thats just because I'm picky and my mom decided to put a whole bunch of stuff on there. The chicken tasted pretty good and the biscuits from my post a bit earlier tasted great as well. I have to say my biggest critics are my brother Julian and sister Alyssa because they are ruthless. If something tastes like shit, they will tell me it tastes like shit and hold nothing back. They do not care about my feelings, they just want to be fed. So I asked Alyssa and she started giving me attitude, so before I got the urge to grab a slipper or some Portuguese torture tool, I walked away and asked Julian. So what did he think?
So this concludes this weeks extremely long blog post. Next week I'll probably be posting on Saturday instead of Sunday because I'm having Thanksgiving dinner Saturday. I'm going to be making scalloped potatoes which looks like lasagna except its made with potatoes and hopefully I'll be making white chocolate covered pumpkin truffles. I hope you liked all of this, and if you didn't, ask me if I care.
