My name is Matthew Pereira and I am a GBC Chef in training. I've always loved business and being able to turn a profit. Back in grade 7, I would always go on Habbo and Runescape. Buying something cheap and selling it for more, it just was really enjoyable for me. At that point I knew that I wanted to run my own business and be my own boss. But the question really was what type of business? After a lot of thought, in my last year of high school I realized that I wanted to run my own restaurant, and that is why I'm at GBC right now.
Right now I do not work in the industry, but I hope to soon. I don't really know when though. I am stuck between looking for a job in the industry as soon as possible or applying myself to restaurants after my first year of college.
I used to never care about cooking, I would just want to eat. Being in the kitchen just was not my thing. But then I started to think differently. Yeah it might be easier to buy frozen chicken nuggets and cook them, but some ingredients in them I can't even pronounce. I then started cooking from scratch whenever I could and whatever I could; chicken strips, hamburgers, pizza and even my own sauces. I think that everyone should consider cooking from scratch because not only is it going to be healthier in most cases, but it is fun to do, you know what is going into it and it can save you a whole lot of money. I am also a strong believer that if you are inspired by someone but can't inspire others, then you are not passionate about what you have learned.
The obvious thing I want from this experience is to learn how to make delicious dishes and learn about foods that I would have never learned about on my own. What I really want is to gain confidence in my cooking and myself. I want to be able to know that this is something I can do and that with hard work and determination, anything can be done.
